1969-1970 Eldorado with sunroof

Does anyone know how many 1969 and 1970 Eldorados were built with the sunroof option ?

The 1970 was the first with the factory sunroof, though there is a photo you can find on the Internet of a '69 prototype with one.  I just looked at the 1971 Ward's Automotive yearbook Percent of "Factory Installed Options" on 1970 cars and a sunroof is not listed.  It isn't listed in the 1972 yearbook for the 1971 models either.  I would guess less than 5% and probably closer to 2%. 

By the way, it listed only 1.9% having bucket seats and 6% having a painted top.

American sunroof was doing those prior to 1970,  but it was not a "factory"  offering until 1970...but still sourced to ASC. They were a fabrication process that involved cutting the opening into a closed top. Rather crudely cut I might add.
American sunroof and GM had a pretty close relationship that the talisman and initial Biarritz offerings were by facilitated by ASC . Later ASC did the 'factory' Biarritz convertibles through 1985

The 1972 Cadillac Data Book mentions to expect an additional 10 days to have a car sent offsite to have the sunroof installed.  The 1970 and 1971 Cadillacs with a factory sunroof mandated a vinyl roof.  By mid-1972, the Eldorado was available with a landau roof and a sunroof could now be had without a full vinyl top.  The Astroroof (mirrored glass sunroof) became available for the 1975 models.
