Has anyone changed the rubber motor mounts without fully pulling the engine out of the engine bay? How is this done?

It is possible, but you need to raise the engine sufficiently to clear the area.  Use a Jack under the sump, with a piece of timber to spread the load.   That is, after you have placed Jack Stands under the car.

BUT.  Make sure you undo the things that might foul as you lift the engine, like the Fan Shroud, and loosen off the Exhaust Flanges and the Accelerator Linkage etc.

PS.   One of the good things about having a Workshop Manual. ;)
