What is the difference between the Series 61 and Series 62 coupes? The both had the same wheel base of 126" and the Coupe deVille was on the longer wheel base. Was it just trim levels or something else?

The only differences are trim level.  I suggest you get a copy of the 48-49 Authenticity Manual in which all the differences are illustrated.  Go to Technical Resources on the CLC web site.
