Hello ,
With Approximately  50 square feet per Hide  ,How many hides are required to complety do a 57 Biarritz . Everything but the dash Pad . Including both sides of the front seat , the back seat , both Door Panels and the sides and armrest both sides next to the back seat . I was told five . However the source was not sure .  The next question how much money should one expect to pay for a good quality Job .

  Thank You,
      Bill

Depends on a few things, if you are doing 1 color or 2.

Optimum execution of the patterns.

I was going to suggest 4

I agree with V63, depending on quality of hides 4-5
is the number I've heard to do an Eldorado.

If the upholster could have the old covers to look at
or at least some good pictures you could get a better
estimate.  The quality and matching to the original
finishing type / patterns will impact the cost of course.

I recommend you discuss this with an experienced firm
like Jenkins in North Carolina.  They likely know from
experience for a '57 Eldorado as they had done dozens
of them.

When I restored my '56 Biarritz, I ordered to Jenkins 3 hides blue metallic (141 square feet) and 2 hides white (98 square feet). On that car, the dash was done with leather too. Unfortunately, the hide quality was not fantastic and there were a lot of unusable bits.
Finally, I had to order 1 blue hide and 1 white hide more. The surprise was that the blue color from the second batch was different than the color from the first batch.
Therefore, if you have a "difficult" color, you may order more material than calculated.

Thank You Roger . My car is not two tone . Better to have one hide more to be safe .
